Harvest - Birch Sap

It’s during Summer and the beginning of Autumn that the birch tree starts preparing itself for the Spring’s “miracle”, when a descending flow of sap, very rich in nutrients, is brought down to the roots of the tree, where the nutrients will be stored for the long winter period, during which the tree hibernates.


In the beginning of spring, after the long freezing winter on the remote forests of Northern and Eastern Europe, the old silver birches (Betula Pendula) come back to life, waking up for a new verdant spring. During a short period, that, depending on the weather conditions, can last as little as 10 days, the precious nutrients, stored in the roots during winter, are pumped up to the branches by a sap flow and promote the blossoming of the leaves.
